Cucumber mango salsa
This fresh spin on mango salsa is so quick and easy to make and makes the perfect side dish for taco night, topped on a salad, or to enjoy with chips!

- 1 cup cucumber diced
- ¾ cup red pepper diced
- 1 cup mango diced
- ½ cup red onion minced
- ¼ cup cilantro roughly chopped
- 1 tablespoon lime juice
- ⅛ teaspoon salt
Chop the cucumber, red pepper, mango, red onion and cilantro and add to a medium mixing bowl. Add lime juice and salt and mix to combine
Enjoy on top of taco bowls, on salads, or on it's own with chips!
- Store the salsa in the fridge - it's best if eaten the same day
