Okay you guys full disclaimer, this is my 1st blog post ever so forgive me since I really don’t know what I’m doing yet…
Okay I might know what I’m doing on the food front, but actually starting this blog… Let’s just say I’ve spent a LOT of time into learning even how to finally get this post out there.
And with a new baby (4.5 months old right now)lets just say, it hasn’t been the easiest.
I definitely give food bloggers way more credit now! But even though it’s mega confusing this is my dream job, so here we go! Hope you stick around for the ride!
So here we are and I’m so excited to start sharing with you the best, most tastiest recipes with top notch healthy ingredients featuring recipes that are all gluten, dairy, soy, corn, canola, and egg free. And whenever possible refined sugar free!
So this mango salsa is one of my favorite kinds of food because it’s raw. Raw food makes me feel amazing, and its just so simple and easy to make and ultra refreshing. Something you can really feel good about giving to your kids this summer!
I add it on salads or taco bowls or potatoes or rice. Really anything.

Tips to make it amazing:
- Make sure to make it with GOOD mangos. You know what I mean. It has to be ripe and one of the good sweet mangos. I used one of the small yellow or ataulfo mangos for this recipe.
- Add avocado to this salsa to make it a little more rich.
- If you like it spicy, add some chopped jalapeños!


Cucumber mango salsa
Ingredients
- 1 cup cucumber diced
- ¾ cup red pepper diced
- 1 cup mango diced
- ½ cup red onion minced
- ¼ cup cilantro roughly chopped
- 1 tablespoon lime juice
- ⅛ teaspoon salt
Instructions
- Chop the cucumber, red pepper, mango, red onion and cilantro and add to a medium mixing bowl. Add lime juice and salt and mix to combine
- Enjoy on top of taco bowls, on salads, or on it's own with chips!
Notes
- Store the salsa in the fridge – it’s best if eaten the same day
- Add chopped avocado for a more hearty spin on the recipe
