This caramel dip is perfectly spiced with pumpkin and perfect to bring to a fall gathering, and best of all, it’s healthy and refined sugar free!

Inspiration for this recipe:
This recipe came about when I was creating a healthy, dairy free pumpkin “cheesecake” dessert. It needed something to cut through the richness. Apple was the obvious choice since we had a lot of them laying around after apple picking. 🍎 🍏
I had a bowl of it in the fridge and found myself going in there to get a taste of it after dinner. So here we are with some apple slices!
The perfect healthy, yet indulgent feeling, snack to bring to someones house this fall or to enjoy at your own home on any cozy fall evening!

Ingredients in this recipe:
Cashew Butter – Cashew butter is the perfect decadent, creamy plant based/dairy free substitute for cream or dairy in dairy free dishes! In this recipe I used an organic, raw cashew butter that is perfectly smooth which I think is crucial. The brand I used and love is Artisana Organics.
Honey – A good honey is so essential for this dish. Something you would eat plain on a spoon! I say this because some honey from the grocery stores have funny flavors. Honey brings a perfect sweetness to this recipe, so opt for a good local, raw honey!
Pumpkin Puree – We’re going for pumpkin here so just a touch of plain pumpkin from the can works great here.
Vanilla Extract – Vanilla gives that umami flavor that adds to the caramel vibe. Since we aren’t cooking this caramel and are worried about the alcohol in the vanilla, opt for an alcohol free version or vanilla bean powder instead.
Salt – Salt really does wonders in this dish to bring out the flavors out so don’t forget it here! You just need a pinch to bring it all together.

Step By Step Instructions:
I start by adding the cashew butter and honey to a small bowl and mixing it together with a spoon.
Simply add all of the other ingredients and mix together until it’s smooth.
Cut up 2-3 apples to serve with it.
Yes! Note that you may not get the same smooth consistency of Artisana Organics brand of cashew butter if you make it at home. You can use a food processor or very high powered blender to blend the cashews with a little bit of neutral oil such as avocado, or melted refined coconut oil. Have patience and give your machine a rest and blend until smooth.
I store mine in the refrigerator for about 5 days!
If you’re cutting the apples ahead of time just spritz them with a little lemon juice and mix them up. You can also dilute the lemon juice with water if you’d like.

What to do with leftover pumpkin:
You can’t open a whole can of pumpkin just to use 1 Tablespoon!

Healthy Pumpkin Caramel Dip
Ingredients
- ¼ cup raw cashew butter I use Artisana Organics
- ¼ cup honey I use local raw
- 1 Tablespoon pumpkin puree
- ¼ teaspoon pumpkin pie spice
- ¼ teaspoon vanilla extract
- 1 pinch sea salt
- 2-3 each apples any kinds you like!
Instructions
- Add the cashew butter and honey to a small bowl and mix until fully mixed together
- Add all other ingredients and mix well until fully combined and smooth
- Cut 2-3 apples to serve caramel with and (optional) spritz with lemon juice so they don't brown. Serve immediately or store in the refrigerator
Notes
- The absolute best tasting and smoothest cashew butter I have found is the Artisana Organics brand. Note that if you use a different brand, or make your own it can change the consistency of the caramel.
- You can store the caramel in the fridge with no issues. Serve straight from the fridge or at room temperature.
